Italian Regional Cuisine: Foundation and Evolution is the most intensive and complete Italian Culinary Program, both inside and outside of Italy. It is a program that was designed to respond to the need for a professional Italian Culinary School that would suit culinary professionals as well as food lover’s in the area of Italian Cuisine. It has been developed with chefs and culinary experts in Italy, who have a combined experience of more than 60 years. It is a culmination of knowledge from professionals who are the top in their field and is continually updated to accommodate a highly competitive and forever changing industry.

Italian Regional Cuisine: Foundation and Evolution is a full immersion program which covers a broad spectrum of subjects that form a base for any student to be able to evolve and develop their own skill base. This program covers all aspects of Italian cooking, including, pasta, pastry, cuisine, gelato, cured meats and preserved products.

Our full program for 2012 is a 7 week program that is taught in both Australia and Italy by Italian Master Chef’s, highly respected and sourced in their own fields.  Students can choose to attend the whole program or only parts of the program. You may attend only the Australian component or only the Italian component of the program. The Australian component is also divided into one week programs for those that are short on time or looking to concentrate on only one particular aspect of Italian cooking. All courses are taught in English or with experienced English translators.  Our Chefs are some of Italy’s most respected Masters.

Student who complete our 7 week program have to opportunity to be placed in restaurants in Italy and work alongside our Michelin Star Chefs
