Sheree Sullivan, founding Udder Delights Cheesemaker, runs the highly interactive cheese making class.
It is Sheree's goal to have you leave the class thinking “I can do this” rather than “this is all a bit too hard”.
Sheree's approach is very practical.
She does not discuss the science of cheese making, but rather what the cheese should look like, taste like and smell like. (This sensory approach is rather like knowing when to stop beating egg whites, rather than why the egg whites change when they are beaten!)
About the Class
There are usually 12 people per class, each have their own work station and their own cheese.
We will not be using cheese making equipment usually found in a cheese factory; rather we will make our cheese using every day household items and kitchen utensils.
After all, that's what you'll have access to when you go home.
Participants take home all cheese made on the day as well as comprehensive work notes, cheese hoops, containers to carry the cheese home in and rennet syringes.
All of the world's cheeses started one of two ways - as a result of an acid set, or as a result of a rennet set.
You will be making both and learning the secrets of what not to do.
Once you perfect these two sets at home, making the most beautiful fresh cheeses, you can then add mould spores and create your own blue and white mould cheeses.
You are able to purchase cheese making equipment, rennet, cultures, mould spores and a home cheese making book full of recipes at the Udder Delights Cheese Cellar
The class starts at 10am and concludes at 2pm.
It is held regularly on the first Sunday and third Saturday of every month. (Private group bookings can be made for other times as long as there are at least 10 participants)
A delicious lunch and glass of wine is provided, and you'll get a free coffee if you arrive at least 15 minutes early to the class.
The class is running at a price of $120 per head.
